Wordle - OK this is currently my favorite. Create word clouds from your text. Check it out ... very cool.
Wikispaces - create wikis and share information easily. Also includes a discussion board and the ability to monitor student input.

LibraryThing - great site which not only has book reviews but has lots of tags (describing words) to help with comprehension and description.
GoogleDocs - Keep your documents online for editing and viewing (great for collaborative projects). Mimics Word so easy for students to create and access.
Mixbook - a digital storytelling/scrapbooking site.
Prezi - another storytelling site.
iSpring - a voice over PowerPoint
Glogster - kind of video blog (watch this one
Animoto - kind of like live PowerPoint. Your students will love it ... try it with a poem set to images, book reviews, or characters in a book.
OneTrueMedia - create slideshows and video montages (kind of like Animoto).
VoiceThread - An awesome site that lets you create and upload from media sources. Also includes access to a digital image gallery from the NYC Public Library.
CreativeCommons - here's a great way to help your students understand copyright - let them copyright their own work! Also includes access to a variety of pictures, music, and images that are free from copyright restrictions.
ccMixter - a remix music site from Creative Commons.
Tumblr - billed as the easiest way to blog (what I call blogging consolidated) this is a great way to communicate, collect your research materials and have them easily accessible anytime, or even create a scrapbook.
Audacity - record and mix audio files.
Delicious - save all your bookmarks so they are easily accessible. Set them up for a class kind of like a webquest. Very neat!
Presentations Etc - tons of backgrounds for PowerPoints and more
VisuWords - provides a great visual representation of your vocabularly words
